Nitrosamine Reference Materials
Formed by reactions between nitrites and certain secondary and tertiary amines, N-nitrosamines can be present as unintentional by-products of food processing, including fermentation. They are mostly found in cured meat, processed fish, cocoa, alcoholic beverages, and cheese, as well as in fermented, pickled or spiced foods.
Because some nitrosamines are considered genotoxic or carcinogenic, testing for them is vital in safeguarding consumer health, while research into the presence of individual nitrosamines in named foodstuffs is also ongoing.
