Food Mutagens Research Chemicals And Reference Materials
Food mutagens are substances present in certain foods that can cause changes or mutations in the genetic material (DNA) of cells, and play a potential role in the development of cancer and other health issues. Toxicological analysis of food mutagens is less common compared to other areas of toxicology, but it may be considered in cases involving suspected poisoning, unexplained health issues and occupational exposure.
Common examples of this type of analysis include the screening and quantification of heterocyclic amines (HCAs), PAHs, mycotoxins, catechins and xanthines in biological matrices such as hair, blood and serum.
